Gluten Free Protein Pancakes for 2
(Makes 4-5 pancakes)
- about 1 cup of Pamela’s Baking & Pancake Mix (it’s the best mix, I’ve tested several)
- 3 eggs
- 4 tablespoons cooking oil (sesame seed oil works best)
- half a cup of Greek yogurt (I use Greek Gods Honey Yogurt for some sweetness)
- add almond milk until mix is desired consistency (thinner mix= thinner pancakes)
I choose to top my protein pancakes with crushed blueberry preserves and a little of the leftover Greek yogurt. A little drizzle of maple syrup if I’m really in the mood for sweetness.
